Piada: Thin crust Italian sandwiches

Most people who pass by this small shop on Clinton Street on the lower east side of New York City don't know what exactly Piada is. Piada is the name of a particular thin crust sandwich originally made in the Emilla-Romagna region of Italy (in the provincies of Bologna, Forlì-Cesena, Ravenna and Rimini). It is widely offered in this northern part of Italy as street food. Other terms for the Piada sandwich is Piadine or Piadina. Piadina should be baked on the testo with olive oil. A testo is a terracotta round which is heated directly on the flame.

It is made from very simple ingredients: flour, water and salt. Piadina has its roots set deep in history. It is a )simple food and is similar to so many other cultures' thin breads.

A master film maker of the 20th Century was an Italian named Frederico Fellini. He was born in the region wher Piada was born and loved the peasant street food all of his life. To celebrate the Piada and Fellini at the same time, the sandwiches here are named after several of the filmmaker's best films!
